Cinnamon Sugar Donut Muffins

Ingredients

  • 5 tbsp butter
  • 1/2 c powdered erythritol 
  • 1tsp vanilla
  • 2 free-range eggs
  • 1/2 c heavy cream
  • 1 1/2 c almond flour
  • 2 tbsp psyllium husk
  • 2 tsp baking powder 
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger
  • 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350 degrees F and line a baking tin with cupcake cases
  2. Cream together butter, Erythritol and vanilla
  3. Add eggs and cream and mix
  4. In a separate bowl combine all other ingredients
  5. Slowly add dry mixture to wet and beat until fully combined
  6. Separate mixture in 12 equal portions in pre-laid cupcake cases
  7. Bake for 25-30 mins or until muffins are browning and a toothpick comes out clean
  8. Let cool completely before removing from pan
  9. Optional - Once cool brush with melted butter and roll in cinnamon/granulated erythritol
  10. Serve and enjoy!
