Cinnamon Sugar Donut Muffins
Ingredients
- 5 tbsp butter
- 1/2 c powdered erythritol
- 1tsp vanilla
- 2 free-range eggs
- 1/2 c heavy cream
- 1 1/2 c almond flour
- 2 tbsp psyllium husk
- 2 tsp baking powder
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1/2 tsp cinnamon
Instructions
- Preheat oven to 350 degrees F and line a baking tin with cupcake cases
- Cream together butter, Erythritol and vanilla
- Add eggs and cream and mix
- In a separate bowl combine all other ingredients
- Slowly add dry mixture to wet and beat until fully combined
- Separate mixture in 12 equal portions in pre-laid cupcake cases
- Bake for 25-30 mins or until muffins are browning and a toothpick comes out clean
- Let cool completely before removing from pan
- Optional - Once cool brush with melted butter and roll in cinnamon/granulated erythritol
- Serve and enjoy!
